Eggs are the most underrated of foods IMHO. Like in the movie, Runaway Bride, everyone has a favourite type. Sunnyside up, omelette, deviled… So many options.
I love eggs, and one of my favourite dishes is the mutta thoran. Simple scrambled egg dish with onions, curry leaves, chilli powder, turmeric and coconut. If you just add a dash of tempering in coconut oil, it takes the dish to another level. You could add other veggies and spices as well, but I like it this way and like it as a side to rice.
This is how I make it, you can find a recipe chart at the end of this post.
- First, chop up some onions finely.
- Then garlic, chopped as finely as the onions. You can skip this if you do not want garlic.
- Curry leaves. Cut up or whole as is your preference.
Heat up a pan, or a kadai, heat a bit of coconut oil and saute the onions just until they are translucent. You do not want them to be crisped up. Add in the garlic. Once that raw smell is gone, add in the chilli powder, turmeric powder and salt. Mix well. Then add the beaten eggs to the pan and stir gently. You want mid-sized lumps. Keep tossing them around in a pan until well done. And then add in the shredded coconut. Cook for a minute and you are done.
Alternatively, when I want to fancy it up, I splutter a few mustard seeds before the onion goes in. Another version of this a spicier version where I put in a bit of coriander powder and garam masala as well, to give the dish a kick. You can make this any way you want. Simple or otherwise.
That is the beauty of eggs. It is one of the most simple and commonest of ingredients, yet it is so adaptable.

That does sound like an amazing dish!
I like omelette with capsicum, cheese, oregano and rosemary. Along with that, I like toasted bread.
Apart from this,I love egg bhurji and I am thinking of trying out your recipe the next time!
